I am a sucker for sweets and one of my favorite is the leche flan, that is similar to creme brulee i believe.
Yesterday, father's day, i was able to taste one of the best leche flan EVER! My husband came home with Leche flan he bought in Dipolog City lol and it amazed me that it didn't break after traveling 8 hours on the road.
I am quite happy to share with you the recipe that makes a great leche flan, this is my own style and people usually have variations.
i use 6 egg yolks. some use the white too but i would rather just used 6 big egg yolks.
1 can evaporated milk
1 can condensed milk
1tsp vanilla - but usually i add more as i like it with more vanilla
1 tsp of lemon or ginger to add more flavor or taste
1 cup cream, usually i use Nestle Cream so it would be more creamier.
sugar for the caramel.
I start by caramelizing the sugar then put it in the molds. Then i would mix all the ingredients above after mixing the ingredients i would then strain it to the mold or if you have the ceramic ones you ca use that too, whatever is allowed in the steamer. I use the steamer and steam it for 45 minutes. in caramelizing the sugar, i know it is the right flavor for me when it turns into amber in color and i wait for it to go a bit more darker, i like the taste it goes with the leche flan.
Then you know it is cooked if you stick a toothpick and nothing sticks to it. Put it in the refrigerator and cool it before serving. perfect! yum!
